每年這個時候,都是栗子成熟的時節,
路經馬路或巷口,如果聞到甜甜的焦香味,
就知道前方不遠處一定有個糖炒栗子攤位。
老爺總說我前輩子是松鼠,因為我非常喜歡吃栗子,
只要看見炒栗子…9成都為買,
最誇張一次就是買了costco超大一袋栗子,
形狀大顆色澤也好看,那陣子吃的真過癮啊!
上星期和老爺星巴客喝咖啡時,
餘光掃到甜點櫃裡的《栗子泡芙塔》,感覺泡芙頂層的鮮奶油非常ふわふわ軟棉棉的,
看了材料簡介,自己回家就研究製作,
外層改用自製白巧克力慕斯包覆著滿滿的栗子泥泡芙,
每一口都能吃到栗子奶油餡的輕甜獨特滋味,
底層搭配的杏仁塔皮,讓整體口感變的更有層次唷…
呵呵…整塊都是我的!好過癮喔!!
材料(18或15cm圓形塔模)

1:調理盆中放入麵粉、奶油、糖粉,用手將奶油剝成小小塊,再拌入麵粉裡。

5:放置先預熱好180℃烤箱裡,用170℃15分鐘烤15分鐘,取出黃豆再繼續烤10分鐘,完成後取出放冷備用。

泡芙
8:無鹽奶油和水放置鍋子裡煮沸騰,加入麵粉(開小火)用耐熱夕膠刮刀持續壓平,直到看不見麵粉成一團就關火。

9:鍋子離開瓦斯爐,分幾次加入打散的蛋,慢慢攪拌到舉起麵糰會自然落下為止,放入三明治袋裡前端剪洞擠圓球形在鋪有烘焙紙(布)若干顆。

10:放置事先預熱好烤箱裡,以200℃烘烤35分鐘,完成後放冷。在泡芙底部用牙籤插個小洞,然後把栗子奶油插入擠滿內部,就是栗子泡芙。

13:將白巧克力慕斯擠滿塔皮底部,將栗子泡芙排滿,再擠滿泡芙空隙,這樣就完成了。(加油)
