聖誕餐桌上怎麼能缺少巧克力樹幹蛋糕,
這是一款應景蛋糕,比起傳統樹幹蛋糕來說,
不需要複雜的方法就可完成喔。
其實蛋糕加了巧克力,就有濃濃聖誕節氣氛,
這次使用三個蛋量來製作,使用小而可愛的6吋模,適合2-3人食用,
蛋糕材料部份比例成功率很高,很容易就烤出漂亮蛋糕,
但戚風模別抹油喔,像我第一次製作就忘了,結果讓蛋糕長不高呢!

1:雞蛋放室溫降溫。蛋黃加砂糖用打蛋器攪打到蓬鬆變白。

2:倒入沙拉油攪拌完,再加入溫牛奶繼續攪拌。

3:麵粉和可可粉過篩,放進麵糊裡攪拌到看不到粉粒,即是巧克力麵糊。

4:烤箱開始以190℃預熱。蛋白用打蛋器持續攪拌,開始起泡後將砂糖分2次倒入,持續攪拌到將蛋白霜反倒也不會流下為止。

5:挖一匙蛋白霜放入巧克力麵糊裡,用橡膠刮刀沿著攪拌盆邊緣刮過麵糊混勻。再倒回蛋白霜攪拌盆裡。

6:右手沿著調理盆邊緣向中間攪拌,左手轉動調理盆,別攪拌過久會消泡。完成後將麵糊倒進沒抹油的戚風模裡,然後舉起輕敲桌面,讓裡面的大氣泡消失。

7:放進已預熱烤箱裡,用170℃烘焙40分鐘。完成後把蛋糕連模具,舉離桌面約20cm摔下2-3次,然後倒扣1小時待冷。

8:用脫模刀沿著內、外緣、底部劃過,就可順利將蛋糕取出。

9:無鹽奶油放室溫變軟,巧克力隔著熱水融化,把兩者混合拌勻,放稍微冷些。
